Hops are added to the brew in the copper, where they are boiled with sweet worts produced from the malted barley in the mash, to give flavour & aroma to the brew.
Hops also act as a good filtering bed. After the rolling boil they naturally settle to the bottom of the Copper or Hop Back, & when the wort (beer to be) is drawn thru to the wort cooler, they will filter out any impurities that have come from the Mash Tun.
